ORIGINS<\/h2>\n

Around 1945, our grandfather Jacinto Llinares<\/strong> purchased a state on the southern slope of the Aitana mountain range<\/strong>, in the province of Alicante, 840 metres above sea level <\/strong>but only 10 km away from the Mediterranean Sea.<\/strong> At that time, in every state there was a farm, a mas\u00eda<\/em>, and the masias<\/em> were run by farmers that cultivated the land.<\/strong><\/p>\n

With the produce they obtained from their farming, these families created a perfect self-sustained system<\/strong> as each masia<\/em> grew their own olive trees, fruit trees, vineyards, wheat and owned livestock. Thus they were able to make their own oil, wine, bread, milk<\/strong> and so on.<\/p>\n

The diversity of this system was highly accountable for the biological richness<\/strong> of the state.<\/p>\n

GROWTH<\/h2>\n

One of our most cherished memories from childhood<\/strong> was our visits to the state.<\/strong> Throughout the decades of the 1950s, 60s and 70s, our grandfather used to take us to Mas de la Real de Sella and thanks to these visits we learned how the farmers laboured,<\/strong> and generally speaking,\u00a0experienced life from another time, and older time<\/strong>: we watched how they plowed the land with their mules<\/strong>, how they transported fruit in bullock carts<\/strong>, cooked over open fires<\/strong>, used candles for lighting<\/strong> as there was no power supply\u2026<\/p>\n

These mind-blowing experiences<\/strong> touched us deeply and unknowingly then, they became the seed that would eventually become our current folly<\/strong>.<\/p>\n

CONSOLIDATING<\/h2>\n

And two key elements<\/strong> were essential in the day-to-day farm life: the vineyard and the celler.<\/strong> The farmers or maseros<\/em> harvested in early September and made a wine that necessarily had to last in reasonable good shape until the new harvest<\/strong> the following year.<\/p>\n

In this pursuit they harvested over-ripe grapes<\/strong> in order to obtain a higher alcoholic degree and residual sugar<\/strong>. Once alcoholic fermentation was over, the wine was pressed and transferred to large wooden casks, from which they took out what they need for their own consumption.<\/p>\n

As a result, these powerful wines<\/em> would now be considered too strong for today\u2019s palate<\/strong> (high level of alcohol, containing residual sugar and very marked tannins) but these defects<\/em> were in fact their preserving agents<\/strong> so the wine wouldn\u2019t go bad before the new one was made.<\/p>\n

EVOLUTION<\/h2>\n

These wines that could be considered brutally handcrafted, extended the legend that it was impossible to make good wine in the mountains. Proving it\u00a0wrong was one of the challenges we were prepared to face when starting our project in 2003.<\/p>\n

A few family members were already curious about winemaking and had made contacts in the high quality-wine segment. These contacts showed us that there were marked similarities between the landscape, orography and climate of the state with those of the Priorat:<\/strong> Mediterranean climate, endless solar exposure, dryness compensated with the breeze from the nearby sea and the extreme day-night temperature contrast given by its altitude.<\/p>\n

Hacia 1945, nuestro abuelo Jacinto Llinares adquiere una finca<\/strong> en la vertiente sur de la Sierra de Aitana, en la provincia de Alicante, a 840 metros de altitud y tan s\u00f3lo 10 km del mar.\u00a0<\/strong>En aquella \u00e9poca, las fincas de la zona ten\u00edan mas\u00edas y las mas\u00edas estaban habitadas por familias de agricultores<\/strong> que cultivaban la tierra.<\/p>\r\n

Con los cultivos de las mas\u00edas, las familias se auto-abastec\u00edan de los alimentos b\u00e1sicos<\/strong> para su supervivencia. Cada mas\u00eda ten\u00eda sus olivos, cepas, \u00e1rboles frutales, trigo, y animales, y con ellos cada a\u00f1o se prove\u00edan de su propio aceite, vino, harina, leche, etc.<\/strong><\/p>\r\n

Uno de los recuerdos m\u00e1s bonitos de nuestra infancia era las visitas a la finca<\/strong>. A lo largo de las d\u00e9cadas de los 50, 60 y 70 del siglo pasado, nuestro abuelo nos llevaba all\u00ed con frecuencia, por lo que pudimos conocer y de alg\u00fan modo vivir aquel mundo antiguo:<\/strong> vimos arar con mulos, transportar los frutos en carros, cocinar con le\u00f1a y la utilizaci\u00f3n de velas para iluminarse porque no hab\u00eda red el\u00e9ctrica.<\/p>\r\n

Dos pilares fundamentales de la vida de la finca eran las cepas y la bodega<\/strong> de la mas\u00eda. Los maseros<\/em> hac\u00edan su vendimia hacia primeros de septiembre, y elaboraban un vino que deb\u00eda de aguantar sin hacerse malo hasta que llegara el vino de la cosecha siguiente.<\/strong> Para conseguirlo se vendimiaban las uvas sobre-maduras para subir el grado y obtener az\u00facar residual, se prensaba pisando las uvas y se fermentaba con los hollejos y el rasp\u00f3n. Una vez terminada la fermentaci\u00f3n alcoh\u00f3lica se prensaba y se llevaba el vino a unas grandes barricas, desde las cuales se iba sacando para su consumo. El resultado eran vinos muy fuertes<\/em>\u00a0para el gusto actual, (de alto grado alcoh\u00f3lico, con az\u00facar residual y muy t\u00e1nicos), pero con buenas condiciones para su conservaci\u00f3n.<\/strong><\/p>[\/et_pb_text][\/et_pb_column][et_pb_column type=\"1_3\" _builder_version=\"4.9.0\" _module_preset=\"default\" custom_css_main_element=\"width: 30%!important;\"][et_pb_code _builder_version=\"4.9.0\" _module_preset=\"default\" text_orientation=\"center\" module_alignment=\"center\"]

Estos vinos tan brutalmente artesanales, crearon la leyenda de que no era posible hacer vinos de calidad en las monta\u00f1as.\u00a0Demostrar que eso no era cierto, fue uno de los retos que nos planteamos hacia el a\u00f1o 2003.<\/p>\r\n

Varios miembros de la familia ten\u00edamos curiosidad y contactos en el mundo de los vinos de calidad.
